This week recipe – LENTIL SOUP
(Serves 8)
Ingredients
8 cups of water
1 pound lentils
2 oz extra olive oil
¼ cup diced bacon
¼ cup prosciutto scraps
1 medium diced sweet onion
2 peeled and diced small carrots
2 stalks diced celery
1 tbsp minced garlic
3 peeled and diced medium potatoes
1 bay leaf
2 cups chicken stock
Pinch salt and pepper
In large sauce pot, boil water then add lentils and cook for 25-30 minutes. Drain water out and let lentils stand. In another pot sauté bacon, prosciutto in olive oil then add bay leaf, garlic, onions, celery and carrots and cook 1-2 minutes . Add chicken stock and potatoes and simmer for 10 -15 minutes. Add drained lentils and cook another 5-10 minutes then serve.
